In September 2021, the journey of Novel Pastries began as a home-based bakery. Meghan, while still in culinary school, initiated the venture by taking orders, and as demand grew, our family rallied behind her dream of establishing a bakery of her own. With the establishment of Novel Pastries LLC, Meghan and her mom, Darci, became partners in this delightful venture. Committed to legal compliance under Michigan's cottage law, we undertook all necessary steps, including securing business insurance, to ensure the legitimacy and success of our enterprise.
2022
In the summer of 2022, our presence expanded to the Coopersville Farmers Market and various Celtic Festivals. Following our second festival, the need for change became evident as we outgrew our home kitchen. Fortunately, we discovered the Incubator Kitchen at the Downtown Market in Grand Rapids—a commercial kitchen operated by a non-profit, providing invaluable support in licensing and essential aspects for the success of budding culinary businesses. Within a year of Novel Pastries' inception, we seamlessly transitioned from a Home-based Bakery to a fully Licensed Commercial Bakery at the Incubator Kitchen. While actively seeking the ideal location for our first storefront, this move enables us to participate in any farmers market or festival, engage in wholesale transactions with other businesses, and offer our products online.
2023
In the summer of 2023, we introduced a Vintage Trailer to our arsenal, enhancing our festival presence. This innovative addition facilitates the safe sale of refrigerated items. Following the success of catering five weddings during the season, including Meghan's own celebration, we've decided to extend the use of the Vintage Trailer for weddings and events.
